Oven Cooking Directions

  • Step 1
    Preheat oven to 425°F.
  • Step 2
    Thaw salsa packets in water.
  • Step 3
    Place frozen fish fillets on baking sheet.
  • Step 4

    Bake fillets for 29-31 minutes*. Flip fillets at 15 minutes.

    * Remember to fully cook fish to an internal temperature of 145°F or higher.
  • Step 5
    Add salsa to fish fillets as you wish - as a topping or on the side as a dip!

Inspired Black Bean Cod Burrito Bowl

BLACK BEAN COD BURRITO BOWL

TOTAL TIME: 30 MINUTES
SERVES 2

INGREDIENTS:

  • 2 Hook Line and Savor Black Bean Crusted Cod fillets with Roasted Corn & Red Pepper Salsa
  • 1 small ripe avocado, chopped
  • 1 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked brown rice
  • 3/4 tsp kosher salt
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice

DIRECTIONS:

  1. Cook fish fillets and thaw salsa according to package directions. Stir salsa with avocado; set aside.
  2. Meanwhile, heat oil in saucepan set over medium heat; cook onion and garlic, stirring often, for about 5 minutes or until softened but not browned. Stir in rice until completely coated.
  3. Add 2 cups water and salt; bring to boil. Cover and reduce heat to medium-low; cook for 12 to 15 minutes or until rice is tender and water is absorbed. Stir in chopped cilantro and lime juice; fluff with fork.
  4. Spoon rice into two shallow bowls. Top with prepared fish and reserved salsa mixture.

    Tip: Other tasty topping ideas include black beans, diced tomato, super sweet corn.

About the Fish

Atlantic cod (Gadus morhua) is from the family Gadidae and is a marine benthopelagic fish, living near the bottom and in the open ocean. It is found on both sides of the Atlantic Ocean including eastern and northern coasts of North America, along the coasts of Greenland, and from the Bay of Biscay north to the Arctic Ocean, including the Atlantic waters around Iceland, the North Sea, and the Barents Sea. Atlantic cod is a favorite for its large white flakes and mild, non-fishy taste.
